RECIPE
1.15 Lbs Flank Steak
Tortillas
Monterey Jack cheese, shredded White cheddar cheese, shredded
Cilantro, chopped
Sour cream
Chipotle Honey Vinaigrette:
4 Tbsp red wine vinegar
3 Tbsp honey
3/4 Cup oil
Splash of water
1/2 Tsp dried oregano
1/2 Tsp fresh ground black pepper
1 1/2 Tsp salt
2 Chipotle peppers in adobo sauce
2 Garlic cloves
-Blend in a food processor or blender until fully incorporated.
Fajitas:
1 Tbsp oil
1/2 Red bell pepper
1/2 Green bell pepper
1/2 Red onion
Salt
Pepper
Garlic powder
Chipotle chili powder
A pinch of Sugar
-In a pan over medium high heat, add oil, bell peppers, and onions. Add seasonings and sauté for 5-6 minutes. Remove and set aside.
Steak marinade:
2 Tbsp adobo sauce
1 Tsp oregano
1 Tsp cumin
1 Tsp chili powder
2 Tsp salt
1 Tsp black pepper
3 Cloves of garlic
1 Tsp lime juice
2 Tsp olive oil
-Add steak marinade ingredients in a bowl and mix. Spread marinade on both sides of steak.
Sous vide steak to your desired doneness and sear on each side. Or, in a pan over high heat, cook steak until internal temperature reaches 145°F to 150°F (about 6-8 minutes on each side). Remove and set aside.
Shred both cheeses and add together. In the same pan, add a tortilla, a layer of cheese, fajitas, steak, cilantro, and another layer of cheese. Fold over and cook on each side until desired crispiness. Serve with a side of sour cream mixed with vinaigrette and enjoy!
